About 45 minutes off of I-95 I was starting to get side trip remorse. Still had a half hour to get to Ayden. Could the barbecue be that good? Worth a three plus hour side trip?

Oh yeah. Three hours and then some. This is the real McCoy. The Skylight's been around for over 50 years, but the Jone's family has been firing up pits on that location for another hundred years.

The Skylight barbecues whole hog, over oak. Big ol' pile of logs out back. Four giant pits for cooking.

At the counter, day in, day out, chop, chop, chop. The guy behind the counter stands there chopping away. Never seems to stop. Chop. Chop. Chop.

Only two things to order. A pulled pork sandwich topped with cole slaw or a pulled pork dish. The dish comes with cracklin' corn bread. Only side is cole slaw.
