The
hot brown, one of the great American Sandwiches, was
invented in 1923 at the Brown Hotel and is still served in
J. Graham's Cafe at the hotel. Sliced roast turkey,
bacon, and pimento are layered on toast, covered with a
parmesan based mornay sauce and browned under the broiler. For
desert, a slice of Derby
Pie - walnuts and chocolate chip, similar to a pecan
pie, but copyrighted. The crust is labeled Kern's
Bakery. No one else can bake genuine Derby Pie.
